Turkey Chili with Coca-Cola® and Brown Rice
Ingredients
- Vegetable oil, as needed
- 1 lb. ground turkey
- 1 yellow onion, diced
- 3 cloves garlic, minced
- Salt, to taste
- Pepper, to taste
- 1 ½ tsp. cumin
- 1 tsp. chili powder
- ½ tsp. cayenne
- 1, 28 oz. can diced tomatoes
- 2, 15 oz. cans kidney beans, drained, rinsed
- ¾ cup brown rice
- 2 cups Coca-Cola®
- 3 cups chicken stock
- Light sour cream, as needed
- Cheddar cheese, shredded, as needed
Instructions
- In a large pan over medium-high heat, add vegetable oil. Add ground turkey, onion, and garlic. Season with salt and pepper and cook until turkey is browned.
- Combine cooked turkey with remaining ingredients in a crock pot and cook on low for 6-8 hours, or high for 2-4 hours. Serve 1 ½ cups per person with sour cream and shredded cheese.
